ROOIBOS RECIPES

CHICKEN CURRY (Serves 4)

1 cube chicken stock
200ml hot Rooibos tea
50ml cooking oil
2 large onions, peeled and sliced
2 cloves of garlic, peeled and bruised
1 piece preserved ginger, crushed
1 green pepper, seeded and chopped
10ml curry powder
4 chicken breasts
1 tomato, skinned and chopped salt and pepper to taste
1 can (410g) pineapple cubes, drained, juice set aside

- Dissolve chicken stock cube in Rooibos tea.
- Heat oil in a pan and sauté onion, garlic, ginger, green pepper and curry powder for 5 minutes.
- Add chicken breasts and fry gently for another 15 minutes.
- Add tomato, chicken stock, pineapple juice, salt and pepper and simmer for one hour or until ..chicken is    tender.
- Add pineapple cubes and heat thoroughly.
- Serve with rice.



MARMALADE

  • 4 Rooibos bags, steeped in 1 litre
  • hot water

  • 2 oranges

  • 2 lemons

  • 600g sugar (750ml)

- Prepare Rooibos tea and allow to infuse for 10 minutes.
- Rinse fruit. Halve and remove pips and white pith in centre. Grate fruit with its rind.
- Pour hot Rooibos tea over fruit and leave overnight.
- Boil fruit in same fluid until soft.
- Remove from stove and add sugar.
- Stir until sugar has dissolved and return to stove. Boil quickly in uncovered saucepan for 30-60 ..minutes    without stirring. It will form a clear transluscent jelly. To test jelly put a little on a plate, ..allow to cool and    press gently with a finger to check if set.
- Remove saucepan from heat. Cool for five minutes before filling and sealing sterilised jars.



ROOIBOS ICE-T

For just a few cents you can brew your own tasty, thirst quenching delicious Rooibos Ice-T at home. Take it to work, the gym, on the road, to the beach, or just to enjoy. It will never let you down.

It's easy brewing instructions will provide you with either a few glasses or Ice-T or a big pitcher, that will stay fresh in your fridge for days. The easiest way to prepare Rooibos Ice-T is to brew 1 oz of loose tea or 11 tea bags in 2½ gallons of water (brew proportionally in a bigger qty.) in suitable container for about 5 to 15 minutes. Take the teabags out (or strain if using the loose tea) and refrigerate. Leave the Rooibos tea inside the container while the tea cools down. Enjoy it.

    CITRUS DRINK (8 glasses)

  • 750ml hot Rooibos tea

  • 40g sugar (50ml)

  • 250ml lemon or lime juice

  • 250ml orange juice

  • 1 lemon or lime, sliced

  • 1 orange, sliced

  • fresh mint

- Add sugar or honey (if desired) to the Rooibos tea and stir until dissolved.
- Add fruit juice and slices. Chill in refrigerator.
- Serve cold with ice and decorate with fresh mint, slices of orange.
